Executive Chef Paolo del Monte is joined by a surprise celebrated Perth chef, Paul 'Yoda' Iskov to create a multi-course menu inspired by Albany’s rugged coastline, Denmark’s fertile hinterland and the seasonal produce of Western Australia’s south.
